Learn to make sourdough rye breads, from light caraway flavoured rye loaves to medium dark European rye sourdoughs and a black bread or pumpernickel. Learn how to adapt our unique sourdough starter to the requirements of rye flour and the different processes to prepare, handle and bake rye based doughs. Participants take home a wide variety of rye breads prepared on the day, our comprehensive book and our sourdough starter.

Learn to make sweet and savoury pastry, baked with delicious fillings as well as choux pastry and a variety patisserie basics. Learn the principles of pastry making so you will feel confident following any recipe, and adapt your own, both by hand and using a stand mixer. Participants take home a wide variety of pastries and patisserie prepared on the day, a recipe leaflet and a bundle of baking equipment.

The Pastry Course includes:

  • A full-day course in a domestic kitchen with a maximum of six participants
  • A bundle of essential pastry-making equipment including silpat sheet, pastry rings, baking beans and a scraper, worth £25
  • 12 months’ breadmaking “technical support”. You can call or email us at any time (within reason!) and we’ll help you straight away.

You’ll also take home all the items that you’ve baked on the day.

Takes you through techniques to make the perfect pizza (including flinging!). Using our outdoor, wood-fired oven you will prepare pizzas from scratch as well as a focaccia bread. Participants take home the focaccia loaves they have made during the day and handouts covering all the techniques and recipes from the course.
